Stuffed Bell Peppers


3 Bell Peppers (halves)

1 cup Cous Cous

1 Medium Onion (chopped)

1 Green Bell Pepper (chopped)

3 Medium Mushrooms (chopped)

1 tbsp Oil

1 Cube Vegetable Stock

1/2 tsp Garlic paste

1/2 tsp Cajun Powder

1/2 tsp Mixed Herbs

Salt to taste

Cheese for garnishing


  1. In a pan boil 1 cup of water with the stock, cajun powder and mixed herbs, then add the cous cous and set aside.
  2. In another pan add oil and onions and sauté over a medium heat, then add the garlic paste, mushrooms and green peppers and sauté for 7 minutes and mix in the cous cous. 
  3. Turn on the oven to gas mark 4, arrange the bell pepper halves and bake for 10 minutes.
  4. Add tomato sauce and spread in an oven proof dish, stuff the pepper with the cous cous and arrange them in the dish.
  5. Garnish with cheese and bake in the oven for 30 minutes and serve with a side of salad.
